Coca-Cola Cake
I’ve been making this cake for years. It’s baked from scratch, it’s super-easy to make, it’s really moist, and is really tasty. Use a standard 10 x 13 inch cake pan. I’ve also successfully baked this in a bundt pan too.
Cake Ingredients
2 Cups unsifted flour
2 Cups sugar
2 Sticks margarine (or butter)
3 Tablespoons Unsweetened Cocoa
1 Cup Coca-Cola (not Diet!)
1/2 Cup buttermilk
1 teaspoon Baking Soda
2 eggs beaten
1 Tablespoon Vanilla Extract
1 1/2 Cup mini marshmallows
Sift flour and sugar in a bowl. Heat margarine, cocoa, and Coke to boiling point and pour over flour/sugar mixture. Add buttermilk, baking soda, eggs, vanilla extract, and marshmallows and mix together. The batter will look thin and the marshmallows will float. Pour batter into oblong, floured, and buttered cake pan. Bake at 350 degrees for 30 to 35 minutes (Use toothpicks or cake tester to tell when done–usually about 50-55 minutes for me in my oven). Ice cake while hot if using first frosting below.
Frosting Ingredients
1/2 cup butter or margarine
3 Tablespoons Unsweetened Cocoa
6 Tablespoons Coca-Cola
1 box Confectioner’s Sugar
1 cup chopped nuts (I use walnuts or pecans)
Combine butter, cocoa, and Coke and heat to boiling. Pour sugar into a bowl and pour hot mixture over sugar. Beat well and add nuts. Pour over HOT cake.
While the above frosting is easy because it is poured over the hot cake right out of the oven, my one complaint is that it is too heavy, more like a fudge then a frosting. I have been fooling around with recipes for frostings and came up with this variation of another frosting recipe. Instead of frosting the cake while it is hot, you have to let it cool in the pan completely and then frost; it breaks the work into two operations, but I like this frosting a lot. It has a richer chocolate flavor and doesn’t overpower the cake like the previous frosting can sometimes do.
Alternate Frosting Ingredients
2 Tablespoons sweet butter
3/4 cup semi-sweet chocolate chips
6 Tablespoons Heavy Cream
1 1/4 cups sifted Confectioner’s sugar
1 Tablespoon Vanilla Extract
3/4 Cup chopped nuts (walnuts or pecans–this is somewhat experimental, but it is a good starting point)
Combine all ingredients except nuts into a saucepan over low heat and stir until smooth. Mix in the nuts and pour over the COOLED cake.
